The challenge in reimagining street food is retaining its character while elevating its quality and presentation. Our chefs focus on flavour integrity—ensuring that the chaat masala tastes exactly as it should—but they apply modern techniques to refine the texture and elevate the appearance.
- Scallop Bhel Puri: Traditional Bhel Puri is a simple mix of puffed rice, vegetables, chutney, and sev (crisp noodles). Our refined version transforms this into an appetizer masterpiece. We use perfectly seared, tender scallops as the base protein. The puffed rice is lightly toasted and seasoned. Instead of a messy mix, the elements are artfully layered, with chutneys (tamarind and mint) applied precisely as foam or delicate drops. The result is a burst of contrasting textures and the familiar sweet-sour-spicy profile, but presented as an elegant starter.
- Pani Puri Shots: The classic Pani Puri (crisp wheat balls filled with spiced water) is a communal, hands-on experience. We transform this into a sophisticated single-serving appetizer. Our puris are lighter and more delicate. The spiced water (pani) is served in custom shot glasses, allowing the diner to fill the puri tableside, ensuring a dramatic presentation and a controlled, perfect bite—no mess, all flavour.

- Tandoori Broccoli Chaat: This vegetarian delight takes a humble vegetable and gives it star power. Broccoli florets are blanched, marinated in a yogurt and spice blend, and then cooked in the Tandoor until they achieve a smoky char. They are served with a light dressing of yogurt, tamarind, and pomegranate seeds. The smokiness is reminiscent of street-side grilling, but the tenderness and flavour precision are pure 27@cove.
- Mini Keema Pao Sliders: This is a nod to the street-side burger equivalent. A rich, spicy minced lamb (keema) is served on delicate, house-made dinner rolls (pao). It’s a comforting, meaty bite, served with an accompanying chutney that balances the spices.
