1. The Cove Tandoori Lamb Chops: Smoking Perfection

This dish is perhaps the purest expression of our culinary philosophy. Lamb chops are a staple in high-end grilling, but ours are elevated through an extraordinary process. We begin with premium, locally sourced lamb, known for its tenderness and flavour. The chops undergo a two-stage marinade: first, a tenderising soak in ginger, garlic, and raw papaya; second, a deeply aromatic coating of yoghurt, mustard oil, and a 27@cove proprietary blend of slow-roasted spices, including a touch of Kashmiri chili for colour and warmth, not overwhelming heat.

The magic happens in the Tandoor. Cooked rapidly at extremely high heat, the outer layer chars slightly, locking in the juices. The Tandoor’s vertical cooking method allows the fat to render perfectly, resulting in chops that are unbelievably moist, smoky, and fork-tender. They are served simply, perhaps with a vibrant mint-coriander raita that cuts through the richness, or a subtle vegetable puree. We use a base of slow-simmered, vine-ripened tomatoes, cashews, and a touch of honey, which is then passed through a fine sieve multiple times to achieve a truly velvet-smooth consistency.

Instead of heavy cream being simply stirred in, we finish the sauce with a delicate swirl of high-quality French butter and a fragrant pinch of dried fenugreek leaves (kasoori methi). We serve a light, airy saffron mousse infused with cardamom, replicating the interior flavour without the traditional weight. The syrup is transformed into a vibrant, rose-water gelee. The “doughnut” component is reduced to golden-crisp, bite-sized milk-solid crumbs, offering the texture and crunch that contrasts beautifully with the smooth mousse. The entire dish is artfully plated and garnished with pistachios and edible silver leaf, turning a humble sweet into a theatrical, multi-textured, and refreshing dessert that perfectly cleanses the palate.
